Brecken made this recipe last Sunday and it is one of my absolute favorites! I discovered it as a newlywed and love it because all the ingredients are usually on hand. It’s also very colorful and even the pickiest of eaters enjoys this fruit salad. Brecken said to call it “Lisa’s Blissful Bites” because it’s more of a favorite of mine!
1 can (20 ounces) pineapple, chunks or tidbits 1/2 cup sugar 2 T. cornstarch 1/3 cup orange juice 1 T. lemon juice 1 can (11 ounces) mandarine oranges 3 to 4 medium apples, chopped (I use red and green for color) 1–2 medium bananas, sliced
- Drain pineapple, reserving 3/4 cup juice. In a large saucepan, combine sugar and cornstarch. Whisk in the pineapple, orange and lemon juices until smooth. Cook and stir over medium heat until thickened and bubbly; cook and stir 1 minute longer. Remove from the heat; set aside.
- In a large bowl, combine the fruits. Pour warm sauce over the fruit; stir gently to coat. Cover and refrigerate. Yield: 12-16 servings.
Speaking of Brecken, yesterday the announcement was made that she will be on the student council next year for her high school! Way to go, B-Reck (as everyone calls her). Oh how I love my Silhouette Cameo. We cranked out this poster in no time at all!
