Brecken’s Blissful Bites: Energy Protein Balls!

Our family is obsessed with today’s recipe. There are two different versions and both are delicious. Just pop them in the freezer and enjoy a cold, nutritious ¬†snack!

On Wednesday night, Brecken created some yummy, delicious food for a “Clean Eating” night with the young women in our congregation. She made “Egg and Veggie Muffins,” “Healthy Living Granola Bars,” “Energy Balls” (thanks, Stephanie, for the recipe), and cut up cucumbers and zucchini with hummus and guacamole for dips. One of my friends also made “Spiced Apple Quinoa Granola” “No-Bake Protein Energy Balls” and “Roasted Cinnamon Chickpeas.” All the girls honestly loved everything!

Today I’ll share with you two of our favorite¬†energy balls recipes. Both are delicious but have a total different flavor.

These energy balls are made with chia seeds, natural peanut butter and shredded coconut.

Energy Balls

  • 2 C. Natural Peanut Butter
  • 3 C. Oats
  • 1 T. Chia Seed
  • 1 T. Flaxseed
  • 1 T. Vanilla
  • 2-3 T. Honey
  • 1/4 C. Shredded Coconut
  • 1/4 C. Mini Dark Chocolate Chips

Mix ingredients together and roll in balls. Store in freezer.

Here’s a closer look at the energy balls. Trust me–they are so yummy!

No-Bake Protein Energy Balls

  • 1 C. Peanuts
  • 1/ 2 T. Coconut Oil
  • 1/2 C. Almonds
  • 1 t. Vanilla
  • Pinch of Salt
  • 2 T. Ground Faxseed
  • 1 C. Quick Oats
  • 1/2 C. Almond Flour
  • 1 Scoop Protein Powder
  • 3 T. Light Agave
  • 5 Packets Truvia
  • 3 T. Unsweetened Almond Milk
  • Mini Chocolate Chips, Raisins, Cranberries, etc., (optional)

Grind peanuts in food processor until finely chopped. Do not make into peanut butter. Add the rest of the ingredients (except almond milk) and process. Add the almond milk as you process (enough to make the dough stick together when formed into a ball). Add any optional ingredients by transferring to a mixing bowl and mixing in by hand. Roll dough into small balls and place on wax paper lined cookie sheet. Put into the freezer for 30 minutes. Transfer to a small container and keep refrigerated or frozen.
