Baby, It's Cold Outside!

We having freezing temperatures here in Utah! Wow--is it cold!! The kids have had a ball playing in all the white stuff.



Kade froze his tail off shoveling and taking the garbage cans out last Saturday.




There is a song that says "I cry the day I take the tree down." Well, all the Christmas stuff came down last Saturday and I didn't cry. Instead, I cry the day I take all the Christmas cards and photos down. I hang them all over my fridge and my kitchen cabinets and LOVE thinking of all my loved ones during this special time. In fact, I just can't take them down. So, they just might still be up when the next holiday season rolls around!

I got a belated holiday letter from my friend, Carol Van Bork, who comes from a small town in up-state New York. I loved how she wrote in the letter what was happening in her world right at that moment. So, I decided to take the challenge:

Right Now:

Out of my window: Snow everywhere (on the ground and flurries from the sky); quiet streets; gray skys.
I am wearing: Fleece sweats, my favorite green Polo Jeans sweatshirt (older than the hills); cozy slippers; no makeup!
I am hearing: The hum of my portable heater. It's freezing in my scrapbooking room and office.
I am thinking: About all the deadlines I need to complete, my scrapbook room that's a big mess from Christmas projects, laundry that needs to be done, family home evening tonight, getting Kade fitted for a tux for Saturday night's Preference dance and the over-ripe bananas that are begging to be made into my family's favorite muffins.



Here's the recipe:

Banana Chocolate Chip Muffins
1/2 cup butter
1/2 cup brown sugar
1 1/2 cups smashed ripe bananas
1/4 cup milk
1 tsp. vanilla
2 eggs
2 cups flour (I grind my own pastry wheat flour for a healthier muffin. My family can't tell a difference.)
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1/2 bag semi-sweet chocolate chips

Cream together butter and brown sugar. Then add bananas, milk, vanilla and eggs. Stir together, then add flour, baking powder, baking soda and salt. Add chocolate chips. Spray muffins tin with non-stick spray. Bake at 375 degrees for 20-25 minutes. Makes 12 large muffins. Yummy!

I am thankful for: A warm home, a wonderful family, parents and in-laws that are still with us despite huge health problems, a great job, friends who are always there for me, my faith, music that cheers me up on gloomy, cold days.
I am creating: Scrapbook pages for articles and special issues; party invitations for Sage's 8th birthday.
I am going: to Costco to buy frozen berries, Carnation Instant Breakfast drink (great in smoothies--I make one every morning for my children), Shrimp soup (really good), salsa and who knows what else! You know how it goes at Costco!
I am hoping: My frozen shower pipe will unthaw and not break.
I am reading: The Shack by William P. Young
Around the house: Eerily quiet. Everyone is gone. It's the first day back to school for the kids.
One of my favorite things: Every night before going to bed I take a hot bubble bath with my favorite bubbles complete with sugar-free hot chocolate, a glass of ice water (that's been sitting for at least 30 minutes), a favorite CD and a candle burning.
A few plans for the rest of the week: Articles written, pages created, camera fixed, clean up scrapbook room, get on top of the laundry, thank you notes written, airline tickets bought for Spring Break, a call to two elderly widow friends, basketball games (Kade's and Collin's), Steve's birthday on the 8th, dentist appointments, Kade's Preference dance, help with homework, two friends birthdays, organize kids school scrapbooks, etc., etc.

I buy the chocolate instant breakfast from Costco...you must use the strawberry kind in a smoothie? Sound like a good idea to me we will have to try it.

I actually buy the chocolate instant breakfast drink. I mix together 1-2 cups milk, 1 pkg. insteant breakfast drink (chocolate), 1 banana, 1/2 cup frozen strawberries and 1/2 cup vanilla or strawberry yogurt. My family loves this combination!

Really enjoyed knowing you in the moment! I will have to do this on my blog! Be grateful the weather is pretty nice, we just returned from visiting our families in Canada and it was -40 no joke! Plus double the snow you have had here. But that is typical for them. This is our first Winter here and I am LOVING it!!! OK, I have a question. WHAT do you do with your cards? Do you scrapbook them, shoe box them, scan them, throw them away????? What do you do to keep them organized and still neat and tidy and away? I have no idea! Thanks! What a fun challenge. I love reading about other people's lives as well. It's neat to know that other people go through the same things.

I am thankful for: My husband who works hard for us so I can stay home with our kids. Though it's hard when he's not here I know it's so we can be live a comfortable life. For my Inlaws who are great and are there when I need them. For a home to live in, clothes to wear and food to eat.

I am creating: A 2009 Calendar for my Mother in Law since I didn't make her one for Christmas.

I am going: to clean out my scrapbook room. It's a MESS!

I am hoping: that my husband's work visa will be cleared soon so we can get ready for our move to Aberdeen.

I am reading: The DaVinnci Code

Around the house: noise from the kids, snow falling outside, cold cold temps!

A few plans for the rest of the week: go to the carpet store and find a remanent for my youngest's room so the rest of the rooms can be fixed :), Activity Days, Cub Scouts, lots of laundry and cleaning.

I have to ask.....how do you grind your own wheat flour? Is it labor intensive? Is it like grinding coffee~ you just grind what you need? It sounds so interesting!

I make a similar banana chocolate chip bread that I also add cinnamon chips into. I also use whole wheat flour and my family loves it. (Although I don't grind my own.) Have a great week!

For those of you who may not have been able to order Project 365, the Little Stories Kit would make a great alternative. I'm not sure I could do a picture every day, but with this kit you could highlight monthly things, since there are 12 Little Books...love this kit!

LISA! Where was your recipe for some wonderfully healthy banana muffins when I needed it!? I love this challenge, and I will be putting it up on my blog today and challenging my family and friends to do the same.

I LOVE the simplicity of life and winter.

Thanks for the tip on Carnation Breakfast..always looking for a good smoothie idea, especially for the daughter that won't eat breakfast. ;)

On a side note...I swear I saw you pulling into Costco yesterday! LOL

I loved reading about your moment. I do this occasionally and it is so fun to go back and read what we were doing!
Here is another smoothie idea, Lisa!!

I love pina coladas, I mean LOVE them! Anything coconut is my favorite!! Anyway, when I want a healthy pina colada after my workouts here is what I do...

1 scoop vanilla protein powder
1/2 cup or so of frozen pineapple
1 tsp or so of coconut extract
water or milk
5 or 6 ice cubes
4 ounces plain yogurt (Greek is my favorite!)

Just blend all this together and you have a delicious and nutritious smoothie!!

Happy New Year Lisa!
I am thankful for my husband who works hard, my son who makes me laugh and the time I get to spend with the rest of my family and in laws.
I am creating Project 365 (soon) and some pages for a vacation scrapbook from last summer.
I am going to go to my son's basketball game tonight.
I am hoping to stick with my New Year's resolution of losing 40 lbs!
I am reading New Moon by Stephenie Meyer. Love these books.
Around the house, I hear the washer & dryer (always) and enjoying the momentary quiet.
One of my favorite things is getting a bubble bath.
A few plans for the rest of the week include going to the mall, having kindergartners read to me at school, laundry, dusting,and walking on treadmill at least 30 minutes every day.
