Ode To Oatmeal! My Favorite Comfort Food!

I went to lunch at Paradise Bakery with my pals, Kristy Banks and Kerri Bradford. The menu at this restaurant is amazing--sandwiches, salads, pastas, baked items, etc. But the only thing I really wanted was oatmeal which unfortunately they stopped serving at 11:00 a.m. (it was 1:00 p.m.). At that moment I realized that I really, really LOVE oatmeal. Not just for breakfast in a bowl with raisins, brown sugar and milk. I love it in so many recipes. It truly is comfort food for me. And guess what--January is national oatmeal month!
One thing that most people don't know about my family is we have a year's supply of food and water stored in our home. We've had this for years and rotate through the food. This is just incase there is a rainy day. Yesterday there was a killer deal on oatmeal at the local super market so just couldn't resist taking a picture of me hauling it in. (It really is heavy.)
This is one of my favorite cookbooks. There are 101 breakfast recipes including some fun ones for oatmeal.

This is one of the quickest, easiest ways to make oatmeal. I just put it in a crock pot the night before and wake up to really great oatmeal. It's a creamier consistency than regular oatmeal but I really love it.
Yikes--Please note that I goofed on the first recipe. I doubled the water but didn't double the rest of the ingredients. I changed it below. So sorry if you made it and had way too much water!
Creamy Slow Cooker Oatmeal
9 cups water
3 cups oats
3 cups half and half
2 tsp. vanilla
pinch of salt
1 cup brown sugar
Just before going to bed, combine the water
and the oats in a slow cooker. Set to low, cover, and let cook overnight. In the morning, stir in the half and half, vanilla, and salt. Scoop into bowls. Sprinkle with brown sugar.
Here are some of my other favorite oatmeal recipes:
Pancake Mix
(from the kitchen of Kristy Banks)
9 1/2 cups whole wheat pastry flour (or you can use 4 cups of white flour and 4 cups of regular wheat flour)
2 cups whole wheat flour (regular)
1/2 cup corn meal
1 1 /2 cups oatmeal (blended in blender until powdered)
2 cups buttermilk powder
5 T. baking powder
2 T. baking soda
1 cup sugar
2 T. salt
Mix all ingredients together in a very large bowl. This recipe makes four quarts of pancake mix. Divide mix into gallon-sized freezer storage bags. Write the recipe for the pancakes and the date on the bag with a Sharpie or Slick Writer pen and store in freezer.
To make pancakes or waffles:
1 cup pancake mix
1/2 c. to 2/3 cup water
1 egg
2 T. oil
Mix ingredients with a wire wisk and cook on griddle.
Granola
(from the kitchen of Marci Leishman)
7 cups oats
2 cups coconut
1 cup oil
1 t. salt
2 cups nuts (optional--I use sliced almonds)
1 T. vanilla
1 cup honey
1 cup sunflower seeds (optional)
Mix all ingredients and spread on cookie sheet (make sure you put plenty of Pam on cookie sheet). Bake at 250 degrees for one hour. Stir and bake one half hour longer.
Mom's Oatmeal Cake
1 cup oatmeal
1 1/2 cup boiling water
1 cube butter
1 cup brown sugar
1 cup white sugar
2 eggs
1 1/2 cup flour
1/2 t. cinnamon
1/2 t. salt
1 t. baking soda
Soak oatmeal in boiling water while preparing other ingredients. Cream butter and sugar. Add eggs, flour, cinnamon, salt and soda. Mix well, then add oatmeal. Bake for 35 minutes on 350 degrees.
Frosting:
1 cube butter
3/4 cup brown sugar
1/4 cup milk
1 t. vanilla
1/2 cup nuts (pecans are good)
1 cup shredded coconut
Boil together butter, brown sugar and milk. Remove from heat. Add vanilla, nuts and coconut. Stir well. Pour over cake.
Homemade Granola Bars
(My sister, Becky, gave me this recipe years ago and it's my family's favorite)
4 cups Rice Krispies
4 cups oats
16 oz. large marshmellows
1 cube butter
1 T. peanut butter (optional)
1 cup miniature M & Ms (found with the chocolate chips) or 1 cup miniature chocolate chips
Combine cereal, oats, chocolate and/or M & Ms in a large bowl. In a microwave-safe dish (I use a large glass bowl), microwave marshmellows, butter and peanut butter. Cook one minute; stir; cook one more minute; stir. Pour over cereal mixture, stir, then press into 9 x 13 buttered pan. Cut into bars and enjoy!

Hi Lisa - that is one HUGE tub of oatmeal! I have never seen anything like that! Where on earth do you store a year's worth of food? I can barely find room for a week's worth of groceries in my kitchen! Thanks for the oatmeal recipes!!

I love oatmeal too! We had it for breakfast today. I don't go to the extreme that you do buying it in 5 gallon tubs! Great idea.

I think you should use the pic of you carrying the oatmeal in as one of your 365. I think it is funny how sometimes we don't realize how much we like something until it is unavailable.
Thanks so much for the recipes. I think I have a thing for collecting them. I do use them...just not as often as I would like. This year one of my goals is to put together a special cookbook for my family (using the recipe book kit that you recommended). I'm hoping to have a rotating menu, maybe about 7 weeks worth so we don't get tired of the same foods. So far I'm doing pretty good. Never thought of making oatmeal the night before. Great idea!
Why do you have a years worth of food & water stored at your home? Is this something that your church requires each family to do? I would need a second home to store all that food, you must keep it in your basement?

So there are more people out there like my son. Nic is 7 and absolutely loves oatmeal just as much as you...if not more. He has enjoyed his daily bowl (now two bowls) of oats from the time he had his first bowl of baby oatmeal. When we travel, he packs it in his suitcase just incase they don't have it where we're headed and this past year, he left a bowl out for Santa because he thought Santa might want more than just milk and cookies. Nic will be excited to know someone else loves his favorite food too!

My favorite oatmeal recipe is also my kids favorite cookie, No Bake cookies.
2 cups sugar 2 tsp. vanilla
4 tbsp. cocoa 2 1/2 cups oatmeal
1 stick butter 1/2 cup peanut
1/2 cup milk butter
optional: 1/2 cup nuts
Cook milk, sugar, butter and cocoa. Boil for 2 minutes. Take off heat and add oats, peanut butter. vanilla and nuts. Spoon onto waxed paper. Allow to cool. Makes about 48 cookies depending on size.

I remember reading about food storage being part of the LDS doctrine, but in these times I think many of us could gain from wisdom about having a food pantry to pull from. Can you PLEASE recommend any good resources for starting a pantry/food storage system? And like several others, I am really eager to know where you are putting all of the supplies. I love getting new recipes; thanks for sharing. I use the Neiman Marcus chocolate chip cookie recipe because it has ground oats in it and I love the extra flavor it adds.
I also got this recipe from a german friend of mine. I haven't made it in a while, but have been craving it. You make it ahead of time and store it in the fridge.
Mix 2 cups oats & 2 cups milk; let sit in fridge a few hours or overnight. Next day, add 1 or 2 cups of vanilla yogurt- till its creamy. Grate 1 large apple, (sprinkle with a bit of lemon juice so it doesn't turn brown), then add to oatmeal mixture. Then I store it in the fridge till we are ready to eat it. It usually lasts us a few days. I add fresh sliced strawberries or blueberries, raspberries or even peaches on top when I serve it. Sometimes we add a scoop of whip cream to this, which makes it really creamy, but not all the time. It depends on how health conscious I'm feeling when I make it :)
Oatmeal Butterscotch Cookies!!!
My grandmother used to make these when I was little. Last week I made a batch (about 50 cookies) and the husband and the kids finished them all in 3 days. I just made another batch - hopefully they will last a little longer!
Will have to keep an eye out for that cookbook too - oatmeal in any shape or form or recipe is perfect when you have 2 feet of snow!!

This is a twist on a fabulous oatmeal recipe I found in a magazine:
Cook regular (Old fashioned) oatmeal like you normally do (stovetop or microwave) and use water or milk (I like half milk half water). Spoon into bowls and top with sour cream or Greek yogurt (my fave). Sprinkle with brown sugar and top with sliced strawberries. It's so yummy!
I always loved Monster Cookies growing up. Thanks to a friend who introduced me to the Oatmeal Jumbos recipe, I don't have to make such a large recipe just to have my favs (original recipe called for like 12 cups of oats, 3 lbs of PB and a dozen eggs!).
Oatmeal Jumbos
1 c PB
1/2 c butter, softened
1 1/2 c packed brown sugar
1/2 c sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
3 eggs
2 tsp vanilla
4 cup quick cooking rolled oats
3/4 c chopped nuts (optional, if omitted add 3/4 cups of choc chips)
1 1/2 c M&Ms
Preheat oven at 350 degrees. Beat the peanut butter and butter on medium to high speed for 30 seconds. Add the sugars, baking powder and soda; beat until combined. Beat in the eggs and vanilla until combined. Stir in the rolled oats, nuts and M&Ms. Use a 1/4 cup measuring cup or a scoop to drop dough 4 inches apart onto an ungreased cookie sheet. Bake at 15 minutes or until edges are lightly browned. (for smaller cookies, use a teaspoon to drop dough about 2 inches apart. Bake about 10 minutes). Cool on the cookie sheet for 2 minutes. Transfer cookies to wire rack; cool. Makes 26 large cookies or about 60 small cookies.
I know you have a granola bar recipe but I was recently introduced to this one, which is FIBER PACKED!!!!
6 c crisp rice cereal
6 1/2 c quick cooking oats
2 c bran flakes
1 c wheat germ
1 c whole ground flaxseed
1 c Bran Buds (all bran)
2 pkg (1-16oz, 1-10.5oz) mini marshmallows
1 c butter, cubed
1/2 c honey
1 c chocolate chips
1/2 c golden raisins
1/2 c dried cherries
1. In large bowl, combine the cereal, oats, bran flakes, wheat germ, flaxseed, and bran buds. Set aside.
2. In a large saucepan, cook and stir marshmallows and butter over low heat until melted and smooth. Stir in honey. Pour over cereal mixture. Stir until coated. Cool for 5 minutes.
3. Stir in chocolate chips, raisins, dried cherries. Press into 2 greased 15x10x1 in pans. Cool for 30 minutes before cutting.
Variations- a total of 2 cups of flavor mixins can be used ie, mini M&Ms, mini Reeses pieces, almond slivers, nuts, dried fruit. whatever is to your liking but no more than 2 cups total
That is one big container of oatmeal! I LOVE IT!! Here's to lowering your cholesterol!! :)

Several people have asked about my one-year food storage plan. First of all, we keep it in a cold-storage room that was built under the porch. This makes it a perfect temperature to keep food fresh. I have built a supply of food that is part of my family's normal, daily diet (wheat, rice, oatmeal, beans, corn, canned fruit, soy milk, oil, canned chicken and tuna, etc). One way to do this is to purchase a few extra items each week to build a one-week supply of food. Then you can gradually increase your supply until it is sufficient to last for several months. These items should be rotated regularly to avoid spoilage. As for drinking water,
store water for circumstances in which the
water supply may be polluted or disrupted.
If water comes directly from a good, pretreated
source then no additional purification is needed;
otherwise, pretreat water before use. Store water in
sturdy, leak-proof, breakage-resistant containers.
Consider using plastic bottles commonly used for
juices and soda. Keep water containers away from heat sources and direct sunlight.
The Hendersons asked how I make the Pastry Wheat flour for my recipes. There are three ways to get this type of flour. 1. Use your regular wheat but grind it on the finest setting. 2. Buy a soft wheat that when ground turns into pastry flour. 3. You can buy it pre-ground in most grocery stores. It's a little pricey but works. Remember that you can use wheat pastry flour in any recipes that call for regular flour.
I purchased my wheat grinder from the Bosch store. It's the L'Equip Nutrimill and as easily adjustable texure control. Also grinds corn into cornmeal. Love it.

I use oatmeal in a different way, as a face cleanser. Mix 1/2 c. finely ground oatmeal (I grind my own in the blender) with 1/2 c. powdered milk. Put in an airtight container. When you're ready to use it, mix 1-2 tsp with water - thick if you want a scrub and thinner for a creamy wash. It's the best cleanser I've ever used. Have a great birthday!

Is the creamy oatmeal recipe really 9 cups water to 1 1/2 cups oats? I tried it last night but there was tons of water in it still by morning.

Here's the recipe for the White Chocolate Cheddar Popcorn:
Almond Bark Popcorn
1 Bag Smartfood White Cheddar Popcorn
1 Brick Almond Bark
Melt almond bark in large boiler. When almond bark is completely melted, remove from heat. Mix in one bag popped popcorn, then pour on to wax paper. Let cool and enjoy. (This is nice and low fat--ha, ha!)
Okay here's a silly question, but when just buying oats for these recipes, what type do you buy? I am always intimidated by oatmeal recipes, because I don't know what kind to buy. I'm not talking the big tub o' oats, like you Lisa. :) Are Quaker oats good for any of these recipes? I want to try some of them, but need to know a good kind to buy.

Quaker is good. I usually buy the regular oats--not the quick oats. The regular ones seem to be good in everything.

Kristy is busy being a full-time mom to her six children. Her oldest is 22 and her youngest little girl is 5. She doesn't have plans anytime soon to work full time. She's happy playing with her kids!
