What a crazy, busy week! Plus healthy, yummy recipes!

I've had a lot of fun taking photos for Project 365. I'd never heard of anything like this until Becky Higgins shared her idea. Since January 1st, I've been carrying my point and shoot camera around (my nicer camera has perpetually not been working--I've got to get to the bottom of it) and taking a photo a day plus writing a quick blurb of what happened in our lives. Unfortunately I wasn't able to get a Project 365 kit before they sold out. (Anybody want to sell a kit to me?) But, I'm still committed to the project and having lots of fun with it. I keep a folder on my computer and store a photo each day in it (luckily it automatically dates itself). Then I keep a word document and write a quick note on what happened that day. For those of you who weren't able to purchase a kit, Becky and team came up with a great solution. Downloads in jpg and pdf versions of many of the components of the kit. So here are some of my photos from the past week--some of these pictures I normally wouldn't have taken.

January 5th: Sage's nightly ritual of eating vanilla ice cream with milk before she goes to bed.



January 6th: Kade shopping for a tux for the big Preference dance.



January 7th: Collin posing with his Timberline 9th Grade Student of the Month award--given to him that day.



January 8th: Steve celebrating his birthday--Weight Watcher's style. Steve has been eating healthier and following the Weight Watchers plan. This was his cake--he loved it! (He's lost 10 pounds in two weeks!)



Strawberry Triffle
1/2 cup sweetened condensed milk
1 1/2 cups cold water
Whisk milk and water together.
Add:
3 oz. sugar-free instant vanilla pudding
Whip and let stand for two minutes
Fold into above ingredients:
8 oz. Cool Whip Lite

Cut 4 cups fresh or frozen (partially thawed) strawberries

Prepared Angel Food cake, cut in 1/2 inch cubes

Layer in glass dish in this order:
Cake cubes, pudding, sliced strawberries. Repeat three times.

Makes 12 servings. Only three Weight Watchers points per serving!

We always serve breakfast in bed on a family member's birthday and here's what Steve got:

Scrambled Egg and Cheese Quesadillas




Ingredients:
6 eggs (I used Egg Beaters)
6 flour tortilla (8-inch)
2 teaspoons butter (can use spray-on butter)
1/2 cup ham (diced small)
3/4 cup mushrooms (diced small)
1/2 cup green pepper (diced small)
3/4 cup shredded part skim mozzarella or cheddar cheese
Salt and pepper to taste
Salsa (traditional or fruit salsa), optional

Scramble cook eggs, set aside. For each quesadilla lightly butter one side of tortilla, turn tortilla over on a preparation plate. On one half of each tortilla, spoon approximately 1/4 cup scrambled egg, sprinkle with 1 tablespoon each diced ham, mushrooms, and green pepper (or other toppings of choice*). Sprinkle with 2-3 tablespoons shredded cheese of choice; salt and pepper to taste; fold tortilla over filling. Heat a non-stick skillet or griddle over medium heat. Place prepared quesadillas on griddle and cook 1-2 minutes or until lightly browned on bottom; turn quesadilla over (fold side down) and brown opposite side. Cut quesadilla into wedges; serve hot with salsa and optional garnishes. To complete the meal, serve with a glass of milk and fruit of choice.

January 9th: Aaran and Collin battling out a Madden Football game. They have "Friday Night Lights" every Friday night!



January 10: Kade and his pal, Ellie, going off to the Lone Peak Preference dance (last one for Kade--so sad he's growing up!). He had a long-tailed tux on with a top hat and cane!



I took a photo yesterday of Sage right after she lost her tooth and today of Collin at his basketball game. He won, 59-55.

This has been so much fun and I'm excited about the results. Really a doable, easy project!

How do you find the time Lisa? I started to take photos,but not as dedicated.
Congrats! to Steve. I am also on WW and have lost 6lbs. Tell him to keep up the good work.
You if like to try new receipes WW has a new book out called "ww in 20 minutes" it has great receipes.

American Idol is tonight...Can't wait!! I will TIVO it as tonight is church group and Dave's bowling!!

Hooray for Steve!! We are all getting healthier, too. Dave surprised us the first of December and bought us a family gym pass. As a family we go most mornings and are eating better. By the time we get to Utah in June we hope to be lighter and fitter!!

Love your Project. Several of my friends here got the kit and LOVE it!! I'm gonna have to try this!!

Looks like you are doing great with the 365 project. I am only starting from Sunday so I have a few days to get things written up for before they aren't fresh in my mind. Project 365 is going on my daily to do list though.

Thanks for letting me know that AI is starting up. We didn't have Fox last year so we missed out on it. But we have been able to add it to our programming due to a little persuasive talking on my part to the network. (too long an explanation). My kids call it the Silly Singer show. They'll be excited to know that its starting back up. They like to guess good or no good in regards to making it to Hollywood.

Love you pictures - we took pictures of ice cream last night too. I love that at the end of the year, I will have a snapshot of our life & our friends. We've had a missionary return home, good friends move away, & other milestones that I may not have photographed. Too much fun.

Lisa, these are great! Thanks for the recipes! I'm a WW graduate! (Lifetime member LOL!) Tell him to keep up the good work! It is SO worth it when you reach your goal!!!! I wanted to tell you that I recently got your "Scrapbooking with Lisa Bearnson" Vol. 5 as a prize from CK and I am shocked! I've never purchased these books before, and I had no idea what I was missing! This is really a great book and the mini album kit that came with it is fantastic! I am really excited and it was fun to see some designers that aren't always in the lime light! Especially your sister!!!

Thanks for sharing pics of your family. You are soooo blessed! I'm learning in the Life Well Crafted Class with Jason and Kolette Hall to also embrace pictures of myself which I think we often take pics of others and purposely (or not) skip ourselves. Project 365 is a great concept to incorporate with this class btw.

Another BTW, you are way tooo funny to say that you didn't get one either :<)

Thanks for the great smoothie recipes and these as well. My family and I are trying to eat lighter and healther this year.I can't wait to try these recipes. Great job keeping up with your photos. I just got my kit and in the process of getting it put together. Becky had such a wonderful idea!!

Good for Steve. I started Weight Watchers a year ago and feel so much better. I had time this last week and blogged about it and it was really interesting to even see what my thoughts were and how they were coming out.

Lisa- I really really really wish I had a kit. I have been a committed Creative Keepsakes follower by buying the past kits and subscribing to your magazine and I am sad I can't get a project 365 kit. It was my New Years resolution and I am hopeful your company can pull through for the dedicated scrappers that have supported your company.

I so want to do this project. I am still waiting hopeful that it will be reproduced : )I don't mind starting at any time but too lazy to put together my own kit...so if anyone else has an extra kit LOL

If you would like some good WW recipes email me, I have 3 that are just excellent!! I am not much of a cook either.

Lisa - I'm LOVING the healthy recipes you are sharing on your blog! My dh and I have been doing WW for the last year and it's fun to see the healthy "thing" going around! :)

Loving your take on 365 as well. I too missed out on the kit, I know you see a lot of products, but didn't know if you knew that Close To My Heart makes 12x12 page protectors that will hold 6 horizontal photos and another type that holds 2 vert. and 2 horiz. Just an idea for you.

Personally I am using their 9x9 daily desk calendar and journaling a little tidbit in the M-Sun spaces (these are on the right hand pages) and the left hand pages are blank) I'm adding my photos and ephemera pieces to these pages w/doodling, etc. I print the photos in wallet size. Anyway, it's turning out pretty good so far :) Just thought I'd share some ideas (felt I needed to trade you something for your great recipes! LOL!)

First of all I just want to state that this is just intended to be honest heartfelt feedback--with no malicious intent.

While your getting a Project 365 kit (sold to you by a blog follower) is great for you, it really feels like salt in the wound to those of us that were not able to get a kit due to all of the problems with the execution of the sale. You may or may not be aware of this, but there are dozens and dozens of kits being sold on e-bay. If you read the comments posted by the sellers, the majority of them state that they are selling the kit because they received more than they ordered and wanted. So, many of us weren't able to get a kit because of the ordering fiasco that occurred. These kits are selling on e-bay from $100-$250 dollars--but you're able to buy a kit at face value just by asking. That wouldn't bother me if the reason we all didn't get kits was simply because there weren't enough to go around. But because of the fact that many people got 2,3 or 4 kits when they only ordered one--that was a very large reason that many of us didn't get one. And our only recourse seems to be e-bay at very inflated prices. But you simply ask for one on your blog and someone sells you one. Honestly, that's really hard to take.

I'm really only writing this as maybe you're not aware of the e-bay sales or maybe don't realize the extent that there are many many hard feelings towards CK right now by alot of previously very loyal customers. And because you're the face of CK, this transaction really bothered me and may bother others as well.

We left off the spinach most of the time and just added salsa, L, T, and S&P.

We like Taco Bell or Old El Paso fat free beans, Kraft 2% cheddar, and Mission tostada shells. (I'll send them to you, if you want to try them but can't find them in UTAH!) ha.

I must say I "second George's comment". I so want a kit too and think about it everyday since I'm committed to taking a picture everyday.

I am anxiously waiting for CK to tell me that they are making more. I can wait for a kit to come my way (versus paying top dollar on eBay)...but can hardly stand waiting to hear if it's happening or not. It's driving me crazy!
