Thanks for entering Becky’s Olive edition of Project Life contest.
Before I announce the winner, I’ve just got to tell you that all your responses on your favorite Valentine’s food made me extremely hungry. So much so that I couldn’t quit eating chocolate the entire February 14th day! And it kept going late into the evening!! Godiva chocolate, sea salt caramels, chocolate covered fruit and chocolate mints. And, I hate to mention that the night ended with a luscious cup of hot chocolate! Several of you mentioned heart-shaped pizzas and our family had one of those too. So–it was a day full of love and nutrition
.
Not to keep you in suspense about the winner but our “Strawberries Forever” meal (actually on Sunday) was a huge hit! Everyone wore red and each person contributed to the meal. We started the evening off drinking strawberry smoothies (made by Sage) while playing a trivia game about strawberries. Did you know every strawberry has at least 200 seeds and that California grows more strawberries than any other state? Also that strawberries are part of the rose family? The winner (my niece, Michal) received a red Target gift certificate.
Sage also made these adorable water bottles:
Next was the appetizer–my favorite! Brecken made Sweet Strawberry, Kiwi and Blueberry Salsa with Cinnamon Chips. Wow!
Here’s the recipe:
Fruit Salsa
1 T. honey
1 T. fresh lemon or lime juice
1/2 t. cinnamon (optional)
4 cups diced fruit (of course strawberries, blueberries and kiwi make a stunning presentation)
Whisk the honey and lemon or lime juice. Mix in cinnamon is desired. Carefully combine diced fruits, then toss gently with the honey mixture. Serve immediately.
Cinnamon Chips
1 T. sugar
1/8 t. cinnamon
Six (6 inch) tortillas
1 1/2 T. butter, melted
Preheat oven to 350 degrees. Combine sugar and cinnamon and set aside. Lightly brush on aside of each tortilla with melted butter. Sprinkle with the cinnamon sugar. Use a pizza cutter to cut tortillas into wedges. Place wedges on an ungreased baking sheet and bake for about 10-12 minutes. Remove from oven, let cool and serve with salsa.
The next course was Strawberry Banana Sour Cream Jello (I made this) and Strawberry Poppyseed Spinach Salad (made by Stefyn).
The main course was deliciously prepared by Steve: Strawberry Chicken Marsala.
Then came the desserts.
Strawberry Trifle made by Taylor and Kade:
And Chocolate Strawberries dipped by Collin and Stefyn. Guess which person dipped these?
And who dipped these?
I will never tell! They all taste the same, right? Looks aren’t everything.
A truly amazing night for all. Next year we will do the same thing–just change the main food from strawberries to something else. Any suggestions?
Now for the winner:
