Ohhh–Another homemade cake from another sweet neighbor. This one cures shoulder blade breaks (that’s what I keep telling myself with every piece I eat!). I adore this cake–so moist and rich in flavor. And a good way to get your kids to eat their vegetables!
Lisa Bearnson’s Favorite Carrot Cake

2 1/2 c. flour
2 t. baking soda
2 t. cinnamon
1 t. salt
2 c. sugar
2 c. vegetable oil
1/2 c. crushed pineapple
3 c. finely grated carrots
1/4 c. cherry Craisins
1/4 c. coconut
Beat sugar and oil in bowl. Add the eggs and mix again until light and fluffy. Stir in carrots and pineapple. Stir in all the dry ingredients adding the coconut and Craisins last. Cook at 350 degrees for 30 minutes. This mix will make three layers of cake. Wait for the cakes to cool, then you can take them out of the pans.
Cream Cheese Frosting:
1/2 c. butter
1 8 oz. cream cheese
3 c. powdered sugar
1 tsp. vanilla
Mix and spread on cake. You’ll need to double the recipe if you do a three-layer cake.
Now on to a different subject!
Here’s a little secret about me–I really don’t like to shop. I know–gasp! It must be in the genes–my mom and four sisters don’t like to shop either. And–neither of my girls really like going to the mall. (I do love T.J.Maxx and HSN.Com .)
However, I LOVE giving gifts so I’ve found the perfect solution are gift cards. They are great for birthdays, weddings, Christmas, grandparents day and so on. However, I hate just giving them in an envelope or spending the time to creatively house them.
Last year for a gift for Kade and Taylor’s wedding, a dear friend (thanks, Marcella Ryan) made this tag book cleverly filled with gift cards for “sundaes” (Coldstone), “matinees” (Cinemark), “cleaning days” (Bed, Bath and Beyond), “I don’t want to make dinner days (TGI Fridays),” “cold days (Starbucks)” and so on. ADORABLE!
I immediately stole the idea and made a tag book for my dad and his best friend filled with gift cards of favorite eating establishments:
