Just a few side notes:
I have tried it both ways–with the cinnamon and nutmeg and without. I prefer it without the spices. I also love the richness of using REAL buttermilk vs. the milk/vinegar substitute. Our family is also addicted to coconut oil (so healthy for you) and usually replace it in recipes for other oils. (You can buy huge containers of it at Costco.) If you do use coconut oil, the recipe will probably take around 10 minutes longer to bake (just keep testing it with a toothpick) and will be a little denser.
Also another great tip for zucchini. You can shred zucchini while they are fresh and then throw two cups into Ziploc Freezer Bags and freeze them. This is a great way to have fresh zucchini throughout the year. Just defrost and use.
Just have to share the wonderful zucchini casserole recipe that my mom made throughout my childhood. I still love this recipe to this day (I mean how could it not be amazing with butter, sour cream and cheese!).
Zingy Zucchini Casserole
½ tsp salt
1 can cream of chicken soup
1 C sour cream
1 C shredded cheese
1 pkg (6 oz) stuffing mix (herb or chicken) (more if you like it breadier)
1 cube margarine or butter, melted
1/3 C waterCook onion and squash in boiling water with salt for five minutes. Drain. Add soup, sour cream and cheese. Combine stuffing mix with melted butter and water. Spread half of stuffing on bottom of a 2-quart casserole (I used a 9×13). Cover with entire vegetable mixture. Then crumble remaining stuffing over top. Bake at 350 degrees for 30 minutes.
