Joy in the Journey: Green Eggs and Ham, “Sitting” Volleyball and A Great Read for Teenagers!

1. Our family woke up this morning to green eggs and ham in celebration of Stefyn’s birthday and St. Paddy’s day!

Stefyn’s  mom, Tina, has been staying with us for the past four days and she woke up at 5:00 a.m. to make this festive food. It was a tradition for Stefyn growing up and was fun to rekindle this memory today. Happy birthday to Stefyn!

2. Steve and I spent two days with our girls at the Denver Crossroads volleyball tournament. There were literally 100 courts at the convention center and all the balls looked like popcorn popping! They play on different teams so it was interesting trying to be in two places at the same time. Good thing there were two of us there to watch!

I was moved to tears during the USA vs. Russia paralympics “sitting volleyball” game. There was a massive crowd around the court and these girls stole my heart as I watched them play with so much intensity. My pics are a bit blurry but here are some off their website:

3. Steve and I have been reading this book with our teenage girls. It’s simply amazing!

Brecken’s Best Bites: St. Paddy’s Day Treats!

Before we dive into some goodies, I have to give a big shout out to the eBrush winner: Teresa Kistler!

Thank you to everyone who entered. Next week I have 1 final BIG giveaway before my March 24th show – I can’t wait!

Stefyn’s birthday is on St. Paddy’s Day so for the past few years, Brecken has made green treats in honor of this special day. The Pretzel Kisses (adapted from a Becky Higgins recipe) and chocolate mint brownies are my favorites.

The cupcakes are a white cake (with green food coloring) and a buttercream frosting with green sugar sprinkles.

Pretzel Hugs:

Pretzels

Hershey Kisses, Hershey Hugs or Rolo’s

M&M’s (match colors to the season)

Preheat over to 200 degrees.

Line a baking pan with pretzels and place 1 Hershey/rolo on each pretzel.

Bake for 8 minutes.

After you take the pretzels out of the oven, place 1-3 M&M’s on each chocolate.

Allow to cool for 2-3 hours.

*We like to mix it up with different color M&M’s & chocolate candies – mmmm!

Mint Brownies:

1 cup white sugar

1/2 cup butter, softened

4 eggs

1 1/2 cups chocolate syrup

1 cup all-purpose flour

2 cups confectioners’ sugar

1/2 cup butter, softened

1/2 t. peppermint extract

mini chocolate chips 

Preheat oven to 350 degrees F (175 degrees C). Grease a 9×13 inch baking dish.

In a large bowl, cream together 1 cup sugar and 1/2 cup of softened butter until smooth. Beat in eggs one at a time, then stir in the chocolate syrup.

Stir in the flour until just blended. Spread the batter evenly into the prepared pan.

Bake for 25 to 30 minutes in the preheated oven, or until top springs back when lightly touched.

Cool completely in the pan.

In a small bowl, beat the confectioners’ sugar, 1/2 cup butter or margarine and extract until smooth.

Fold in mini chocolate chips. 

Spread evenly over the cooled brownies, then chill until set.

Joy in the Journey–Organizational Idea+Brecken’s Surprise Party+Another Favorite Quote+Catching Fire!

I love “Joy in the Journey” Mondays. It gives me the chance to reflect on moments in my life that give me so much joy. Here are three of them:

1. I’ve got Spring Fever BIG TIME and that means I want to organize everything!!! I’ve had a goal to organize a cupboard, closet, shelf or drawer, a day, for sometime now and I always include it on my “to do” list. Sometimes it happens–sometimes it doesn’t. But–there’s something about this time of year that makes me want to organize and purge! My favorite local store is a thrift store called Desert Industries. No–I don’t go shop there. I go there to dump stuff I no longer use! I’m getting the girls bathroom cupboards redone and am going to surprise them by organizing their top drawer like this (with bathroom items)! I can hardly wait to see their reaction!

2. A scrapbooker once shared this quote by Marjorie Hinckley with me and it continues to be the words I strive to live by:

“I don’t want to drive up to the pearly gates in a shiny sports car, wearing beautifully, tailored clothes, my hair expertly coiffed, and with long, perfectly manicured fingernails.
I want to drive up in a station wagon that has mud on the wheels from taking kids to scout camp.
I want to be there with a smudge of peanut butter on my shirt from making sandwiches for a sick neighbor’s children.
I want to be there with a little dirt under my fingernails from helping to weed someone’s garden.
I want to be there with children’s sticky kisses on my cheeks and the tears of a friend on my shoulder.
I want the Lord to know I was really here and that I really lived.”

3. Stefyn and I “hosted” a really fun surprise party for Brecken’s 17th birthday! All her volleyball team showed up and when Brecken walked in the room, she was totally shocked! We then proceeded to have an “All Mixed Up” meal featuring Brecken’s eclectic favorite foods. Everyone sat at a big round table:

And then the fun began. Each girl had a list of 12 of Brecken’s favorite things like Big 5 Gum, Hunger Games, Sunsets on the Beach, and so on. They had to randomly number each item and put their name on the paper. Numbers 1-4 were their first course, numbers 5-8 their second course and numbers 9-12 their third course. Silverware wasn’t on the table and was part of the numbering system. One gal had to eat her first two courses with NO utensils and then for her third course she got a spoon, fork and knife and snap peas (something she didn’t even need silverware for)! So essentially every girl got the same food but it came in different courses.

Here’s was the list of Brecken’s favorite foods:

4. Curry and Rice

5. Snap Peas

6. Pecan and Apple Salad

7. Strawberry Trifle

8. Chocolate Chips Pancakes

9. Homemade Pita Chips withHummus

After much laughter and fun, the girls went to a ropes course and out for ice cream. At the end of the night, Brecken came home very happy and said “You got me! I always know everything that’s going on but–this was a total surprise!”

Finally, I’m still laughing over this one. Last Thursday night, Sage’s friend, Kate, invited her to the launching of the “Catching Fire” DVD at Walmart. It couldn’t be purchased until 12:01 a.m. so the girls (along with Kate’s sweet dad who took them) showed up an hour early to make sure they could stake their claim in line and grab the movies. No need. They were literally the only people there! Walmart still made them wait until after midnight to buy the DVDs!

Brecken’s Blissful Bites: Salsa, Salsa and More Salsa!

brecken 1 533x800 Breckens Blissful Bites: Salsa, Salsa and More Salsa! This week was filled with Brecken’s cooking, cooking and more cooking. She wanted to cook her entire birthday dinner so she invited 30 people over and spent two days preparing the most tasteful spread ever!

As I mentioned in my last “Brecken’s Blissful Bites” segment, nothing is too hard or has too many ingredients for this amazing chef. There is no way I’d spend two days in the kitchen for one meal. For Brecken, this is her unwind time and she loves every step of the process.

The menu came from her new favorite cookbook pictured below. She choose a “Fiesta” meal since we all adore Mexican food. My mouth is still watering from all the tasty morsels!

Here was the menu:

Pico de Gallo

Watermelon Pico de Gallo

Chipotle Salsa and Glorious Guacamole

Beef and Chicken Fajitas and Chimichurri Shrimp

Homemade Tortillas

For Brecken’s Best Bites, I’m going share the three salsa recipes she prepared. It’s hard to say which was the best–they were all bursting with flavor!

Straight-Up Pico de Gallo:

  • 12 roma tomatoes (slightly under ripened works)
  • 1 large onion
  • 1/2 cup cilantro, chopped
  • 1 lime
  • 1/2 teaspoon salt
  • 2 jalapeños, seeded and diced

Dice up equal quantities of tomatoes and onions. Roughly chop the cilantro.

Now, slice 1 or 2 jalapenos in half. With a spoon, scrape out the seeds. (If you like things spicy, leave in some of the white membranes.) Dice the jalapenos very finely; you want a hint of heat and jalapeno flavor, but you don’t want to cause any fires. Now dump the four ingredients into a bowl.

Slice the lime in half and squeeze the juice from half the lime into the bowl. Sprinkle with salt, and stir together until combined. Be sure to taste the pico de gallo and adjust the seasonings, adding salt or more diced jalapeno if needed.

Chipotle Salsa:

  • One 10-15 ounce can diced tomatoes and green chiles, such as Rotel
  • Two 15-ounce cans diced tomatoes
  • 1 bunch cilantro, stems removed
  • 1 medium onion, diced
  • 1 to 3 (depending on heat tolerance) chipotle peppers packed in adobo (sold in Hispanic section)
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon ground pepper
  • 1/4 cup lime juice

Combine the tomatoes, cilantro, onions, garlic, peppers, cumin, salt, sugar, pepper and lime juice in a blender or food processor. (This is a very large batch. I recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.)

Pulse until you get the salsa to the consistency you’d like. I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.

Refrigerate the salsa for at least an hour before serving.

Watermelon Pico de Gallo:

  • 1/2 whole Small Seedless watermelon, Diced
  • 1/2 whole red onion, Diced
  • 1 whole red bell pepper, Seeded And Diced
  • 1 whole green bell pepper, Seeded And Finely Diced
  • 1 whole yellow bell pepper, Seeded And Finely Diced
  • 2 whole Jalapeños, Seeded And Finely Diced
  • 1 whole Bunch cilantro, Chopped
  • 2 whole juice Of 1 to 2 limes
  • 1/2 teaspoon salt

Throw all the ingredients into a large bowl and toss it together. Taste with a chip and adjust ingredients as needed.
